Val di Trivena as told by Alfio
He calls himself a “cook and restaurateur”, but he is much more than that. For him, the environment inspires pure, direct thinking, which he then transfers into his culinary creations. The light, air and colours of the mountains are the ingredients of his dishes.
Who is Alfio?
Alfio Ghezzi was born in Breguzzo. He has always lived in this small village in the Valli Giudicarie Centrali, though he moved away in recent years to pursue his career as a chef. He defines himself as a “cook and restaurateur”, but he is also much more: he has been a teacher of cooking and pastry, but above all a Michelin starred chef since 2010, when his passion for cooking and the territory led him to manage Locanda Margon (where he repeated his Michelin star), then to open his own restaurant Senso - Alfio Ghezzi inside the Museum of Modern and Contemporary Art of Trento and Rovereto.
He is executive chef at EALA My Lakeside Dream, a 5-star luxury hotel in Limone sul Garda, owner of Alfio Ghezzi Bistrot and co-owner of Inalto-Dolomiti.
He has an innate passion for the mountains, nature and everything to do with the study of the edible realm.
There is a moment when almost all life is extinguished, and silence is no longer heard. Here you feel the need to return, to rediscover your places.
Why Val di Trivena?
Val di Trivena is “almost a place of the quest for emancipation”. For a cook, coming to these valleys is deeply meaningful. “I go there not to look for ingredients, but to consider the light, air and colours of the ingredients. All these things bestow a pure, direct thinking onto my work. Almost all of us at first try to get away, to experience, to accumulate, but then there comes a certain moment when you feel the need to return, to rediscover your places, and to communicate their meaning. When you feel like escaping from a certain space where you do not fit in, you come to these mountains.
I suggest coming here because you are in a genuine environment and because those who need to have a spiritual relationship with the environment or with themselves at some point in their lives, can find it here”.
I have grasped a series of messages that only these pure places can convey.
