The company owned by the Leonardi family was founded in 1988 with the production of smoked trout, according to a traditional recipe that has been perfected with experience. All the processing carried out on the raw material are processes that refer to the old methods and that use only selected ingredients and as much as possible originating from the same mountain territory from which the processed fish comes. Over time the range of processed products has expanded and today ranges from fresh trout fillet to marinated trout in aromatic vinegar to marbled trout, up to tartare, fresh fillet of alpine char, smoked alpine char, marinated alpine char and eggs and trout bottarga.
